I understand the chaos blade has a bit higher bleed but damages you. It looks like it's longer though and possibly higher damage when fully upgraded. There are two ways that I have found to get an uchigatana: Kill the Undead Burg merchant. Join the forest covenant, and purchase it in Blighttown. Neither of these work for me because I really like the easy purchase of arrows from the merchant, and I accidentally made the cat-thing that lets you join the forest covenant mad as I chose the wrong ... It has a godly moveset (that runnng r1) great dex scalling, good range, and the weapon art is realy good along with the bleeding effect. It's moveset is excellent, longish reach, high base dmg/scaling for Dex builds, has bleed AND can be resin buffed, and has an excellent, super adaptable battle art.
