For those that might have the same or similar problems, try going to your appdata\local\Larian Studios\Baldur's Gate 3\LevelCache folder and deleting everything inside it. Everything loads very quickly now on my end. Hope it might help someone else!

It would take literally 0.5 seconds for the PS5 load process that amount of data.
